Ingredients
- 1 kg chicken with bone
Mandi spice mix
- 2 tbsp coriander seeds
- 1 tbsp Cumin seeds
- 1 tsp clove
- 1 tbsp cardomom
- 1 inch cinnamon stick
- 1 Dried lemon
- 1/2 tsp turmeric powder

- 600 gm basmati rice
- 2 onion sliced
- handful of Raisins
- 1 cup oil
- 2 tbsp melted butter
- 1 dried lemon
- 1 piece charcoal

Instructions
- Prepare the Mandi spice mix by grinding together coriander seeds, cumin seeds, cloves, cardomom, cinnamon stick, Dried lemon (Remove seeds And add ) to a fine powder.
- To the chicken add the 3 tbsp mandi mix ,turmeric powder, salt,2 tbsp oil and marinate for 1 hr.
- In a pan add oil and fry the onions till golden brown and keep aside.
- To the same pan add more oil and shallow fry the chicken then add in the 3 tbsp fried onion , chicken cube grated, salt if required, water and cook till chicken is done.
- Remove the chicken piece and keep aside.. To the chicken stock formed add in the required water , mandi powder, remaining fried onion , dried lemon .
- Add in the soaked and drained rice and cook the rice until done..
- To the melted butter add the 1 tbsp of mandi mix well and add to the chicken piece and grill@ 180 c for 10 minute until top is grilled
- when the rice is cooked well layer the grilled chicken on the top of rice, Burn the coal and add to a small bowl and add tsp of oil and close the lid and keep for 10 minutes.
